"Sextos" Chicken Tortilla Soup

So I am just going to bust this one out tonight as well. My "Sextos" chicken tortilla soup recipe. A lot of people seemed to like this one on my instagram and it was hands down the best chicken tortilla soup I have ever had. We named it "Sextos" because that's my last name, sexton, and my mom's, santos, meshed together. I know I know, we are original. :-p  When I cook with my mom we normally try to make it paleo friendly because she lives a paleo lifestyle. However, this soup is not paleo friendly, just a heads up on that. We are hoping that as we make it more in the future we will find some great substitutions and eventually have a paleo friendly creamy chicken tortilla soup! Healthy Pancakes? Yes, you heard right!

Lately a few people have been interested in my protein pancake recipe. Although I don't really have a definite recipe I have a base recipe I am posting for you guys. I tried a few different recipes for healthy pancakes and ended up meshing some together and subtracting some sweeteners and came up with this. I am constantly trying and adding new and different ingredients to make them even more delicious. I hope you guys enjoy and try different combos! Base Protein Pancake Recipe:  1/2 cup of uncooked oats  2 egg whites 2 Tablespoons almond milk  1/2 Teaspoon Vanilla extract  1 scoop of protein powder(I use any flavor) Directions : Dump all that stuff into a food processor and process till a smooth consistency(1-2 minutes). :-p Then pour it into a pan(spray with coconut oil first) on medium heat and let cook till the outside edges start to bubble.
