"Sextos" Chicken Tortilla Soup


So I am just going to bust this one out tonight as well. My "Sextos" chicken tortilla soup recipe. A lot of people seemed to like this one on my instagram and it was hands down the best chicken tortilla soup I have ever had. We named it "Sextos" because that's my last name, sexton, and my mom's, santos, meshed together. I know I know, we are original. :-p  When I cook with my mom we normally try to make it paleo friendly because she lives a paleo lifestyle. However, this soup is not paleo friendly, just a heads up on that. We are hoping that as we make it more in the future we will find some great substitutions and eventually have a paleo friendly creamy chicken tortilla soup! I'll keep you guys posted if/when that happens. :) Anywho here's the recipe enjoy!
Side note: we do a lot of things "to taste", sorry thats just how it goes in this house hold. So know your spices and judge for yourself based on what you personally like. 



{Sextos chicken tortilla soup}
2 chicken breast poached and diced1 onion(diced)
1/2 a bell pepper(diced)
1 Can of low sodium black beans
1 can of Rotel diced tomatoes(any flavor you want)
1 small can of chopped green chilies
1/2 a bag of frozen corn (8ounces)Cumin to tasteChillie powder to taste
Garlic powder to taste
Minced garlic to taste
A sprinkle of black pepperA carton of chicken broth
Half a pint of heavy cream
In a huge pot sauté the chopped onions and bell peppers for around 5 mins then
start adding the black beans, corn, diced tomatoes, green chillies, and all the
spices (to taste we added a lot we like our food spicy) add in the whole carton
of chicken broth and the diced poached chicken. Stir all the ingredients together, bring to a rolling boil then turn down to a simmer and let cook for half and hour. Turn off the heat after half an hour and add in the cream! Enjoy!
Side note: for toppings we used the little tortillas, diced
avocado, diced red onion, shredded Monterey cheese!
